When one usually works with wild olive, the wood gives off an almost nauseating sweet smell. This block was very dry and had none of this sweet smell. Instead, it gave off a fine powdery dust that played havoc with my sinuses. The initial few smokes in a new wild olive has a slightly bitter taste which – thankfully – soon disappears. I think there will be no bitter taste with this one and it should smoke like a champion right off the bat.
